Don's KY Derby Pie    

     Whether it is derby weekend or any other day of the year, this pie exceeds everyone's expectations. It is a standard at our home any holiday of the year.

Ingredients:

  • 1
  • cup sugar
  • 0.25
  • cup flour
  • 1
  • tspn vanilla
  • 1
  • stick melted butter
  • 1
  • Tbspn Bourbon optional
  • 0.5
  • cup chopped pecans
  • 0.5
  • cup chopped walnuts
  • 1
  • cup chocolate chips
  • 1
  • unbaked pie shell

    Variations:

    You can use a cup of pecans or a cup of walnuts, but a half cup of each is much better. You can also use one or two tablespoons of Bourbon. I find one is not overpowering. Other than that, don't change a thing!

    Cook's Tip:

    To serve, cut a slice, warm it 10 or 12 seconds in a microwave and serve warm. Serve with a spoon of whipped cream or a scoop of ice cream or plain.

    Directions:

    Beat eggs and sugar until thick. Add melted butter, slowly stir in flour and add vanilla. Stir in nuts and chocolate chips. Pour into an unbaked pie shell and bake at 375 degrees for 30 to 35 minutes. Check at 30 minutes. Pie gets tan on top, puffs somewhat, then settles when you pull it out of the oven. Let it cool.
