When microwaves first debuted in the 1980s, optimistic cookbooks showed gloriously well-roasted, golden brown turkeys emerging from them after a relatively short cooking cycle. Now that we all know better, most of us have discovered new ways to use the microwave in our daily lives. It’s a place to zap things for short bursts of time while we’re preparing something else on the stove. It’s capable of a lot more, though, than just heating water and re-heating yesterday’s takeout.
